ABOUT THIS COFFEE
Hacienda San Ignacio is located near Palmichal de Acosta in the Terrazu region of Costa Rica. With altitudes ranging from 1100-1600 meters and a terroir influenced by the Pacific coast, San Ignacio produces sweet and complex coffees that are carefully harvested at their full potential and are processed using a variety of methods. This particular lot has been processed using the yellow honey process.
This involves removing the outer skin of the cherry and most of the fruit pulp before allowing the remaining mucilage to dry on the bean.
In addition to their excellent coffee production, the farm is also dedicated to preserving and maintaining Costa Rica’s environment. For the last five years, San Ignacio has been a part of the FONAFIFO-MINAE forest protection program and 57% of the total area of the farm is dedicated to natural conservation. The coffee growing areas are separated by large forests maintaining biological corridors throughout the property.
