PROCESSING METHOD - Natural Carbonic Maceration 
Grown by Felipe Arcila at Jardines de Eden. This coffee was exposed to a dry anaerobic fermentation of 52 hours inside grain pro bags adding Co2. The coffee was then placed on raised beds until 10.5% moisture content was achieved.
Jardines del Eden is the first farm to be purchased by Carlos and Felipe Arcila of Cofinet. The Farm has existing Castillo and has recently had some the most exciting varieties planted there.
This micro-lot is 100% Castillo. This varietal was developed by the Federacion de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
