ABOUT THIS COFFEE:

We love this crisp, white honey coffee from Rogers farm, Santa Teresa 2000.
It displays a bright clean acidity, structured sweetness and notes of caramelised nuts in the finish. This is a Typica Mejorada varietal, which is gaining popularity and has beautiful layered complexity.

ROGER URENA
Roger Ureña’s mill is known as ‘Santa Teresa 2000’ due to its elevation of more than 2,100 meters above sea level, making it one of the highest mills in Costa Rica.
With the help of Roger’s eldest son, Alex Ureña, Roger gradually built his own micro-mill, Santa Teresa 2000, and began processing his own coffee in 2015, right next to the farm with the same name, Santa Teresa.

Both the farm and the mill are part of the Blue Flag Costa Rican Program, and through the Neutral Carbon certification process, they aim to foster a stronger relationship with the environment.

WHITE HONEY PROCESS
A hybrid method between natural and washed process, the ripe coffee cherries are hand picked when ripe and the skin is removed.
Minimal mucilage remains on the beans and is left to dry and ferment. Drying times can range from 18-25 days. The amount of pulp remaining on the bean contributes to the degree of fermentation the coffee undergoes and the flavours produced. Often fruity, jammy notes are present with caramelized sugar sweetness

TYPICA MEJORADO
Mejorado is a very unique variety mainly grown in Ecuador. Recent genetic testing by World Coffee Research demonstrated that Typica Mejorado is a hybrid of Bourbon and Ethiopian Heirloom/Landrace —it’s not a descendant of the Typica lineage, even though it’s taken the name of ‘Typica Mejorado’
