Merly León

Merly León is a specialty coffee producer based in Callayuc, in Peru’s northern Cajamarca region. Her farm sits high in Queromarca, around 2,250 metres above sea level, where cool temperatures, strong sunlight and slow cherry maturation create ideal conditions for clean, expressive coffee. Merly is known as a curious and quality-focused producer, continually refining her work on the farm and experimenting with techniques to improve each harvest. Alongside her sister Ismeria, who also farms in the region, she represents a new generation of Peruvian producers pushing quality forward through careful farming, processing and a deep connection to the land.
The broader Callayuc district has significant variation in elevation, biodiversity, valleys, forests, and mountain terrain, creating the kind of microclimate diversity that can produce distinctive microlots.

the process

Washed

Merly uses a traditional washed process, selecting ripe cherries, removing the fruit, allowing the remaining mucilage to ferment, then washing and carefully drying the parchment. The result emphasises clarity and the natural character of Yellow Caturra.

Selective Harvest

Ripe cherries are carefully selected after harvest to support consistency and sweetness.

Depulping

The outer skin and fruit are removed, leaving parchment coffee with its mucilage intact.

Fermentation & Washing

The remaining mucilage is allowed to break down through fermentation before the coffee is thoroughly washed.

Careful Drying

The washed parchment is dried slowly and carefully until stable.

why we chose this coffee

Clarity and character from Peru’s highlands.

We chose Merly’s Yellow Caturra for its balance of fruit, sweetness and restraint. Mandarin and plum sit alongside a gentle almond character and a red-rooibos-tea finish, making this a distinctive but beautifully approachable washed coffee. It’s also an opportunity to highlight the careful work of an ambitious producer in Cajamarca.
