Thirika Farmers Co-Operative Society

Githembe is built around a community of around 1,500 smallholder farming families in Kenya’s Kiambu region. Each family grows coffee on small plots, carefully harvesting ripe cherries before delivering them to the Githembe washing station.

Together, through the Thiririka Farmers Cooperative Society, these growers contribute to a coffee that reflects both the character of the region and the collective work of the community behind it.

the process

Kenyan Washed

Kenya’s traditional washed process is renowned for producing exceptionally clean and vibrant coffees. It allows the distinctive character of the coffee and its origin to shine.

Harvest & Sorting

Ripe coffee cherries are hand-picked by Githembe’s smallholder farmers and delivered to the washing station, where they are carefully sorted before processing.

Pulping & Fermentation

The cherries are pulped to remove the fruit before the parchment undergoes a dry fermentation for approximately 16–24 hours, allowing the remaining mucilage to break down.

Washing & Soaking

The coffee is thoroughly washed and density graded before being soaked in clean water for a further 16–18 hours - a classic part of Kenya’s fully washed processing method.

Slow Drying

The clean parchment is spread across raised African beds and slowly sun-dried, with regular turning and sorting to encourage even drying and maintain quality.

There’s something unmistakable about these coffees - vibrant fruit, incredible structure and a depth of flavour we simply don’t find anywhere else. We love them, and we love being able to share each new harvest with our customers.
