We've been sourcing coffee from Diofanor Ruiz for more than seven years, long before we had the opportunity to meet him in person. Visiting his farm only reinforced why his coffees have remained a cornerstone of our offering.

the process

Traditional Washed

A traditional washed process carried out with precision, allowing the character of Diofanor’s Castillo to lead- clean and structured, with defined sweetness and clarity in the cup

Harvesting

Diofanor and his team of hand pickers ensure only the ripest cherries are harvested according to strict criteria

Hand Sorting

A team (usually Diofanors'family) lay the ripe cherries out on sorting tables to remove any defective cherries

Pulping & Fermentation

The ripe cherries are pulped to remove the outer skin and wet fermented in tiled tanks to seperate the mucilage from the bean.

Drying

Diofanor lays the coffee still in parchment on custom raised beds and carefully monitors moisture content until the ideal range is reached
